It has been quite a while since I’ve shared a recipe around here. This Quinoa Power Bowl recipe is just too good not to pass along. I’m all for quick and easy meals and this one doesn’t disappoint. This dish also requires minimal ingredients and skill to prepare. Quinoa is a higher protein rice alternative and it’s also gluten free. I am not gluten intolerant but my husband does have a mild sensitivity to it. We try to mix in some gluten free and vegetarian options into our diet to combat any issues.
These quinoa power bowls are perfect for any meal of the day. Another great thing is that all of these ingredients are easy to find at any grocery store. I can’t stand when I find a new healthy recipe that I want to try and it requires a laundry list of obscure ingredients. All that you’ll need is quinoa, eggs, avocado, parsley and seasonings and salsa are optional. If you want to get really fancy you could even add kale and/or spinach.
Simple Quinoa Power Bowls
- 3/4 cup Dry Quinoa
- 4 whole Eggs
- 1 whole Avocado (sliced)
- 2 tablespoons Chopped Parsley optional
- 2 teaspoons Trader Joes Everything Bagel Seasoning optional
- 1/2 cup Salsa (optional)
Cook Quinoa according to package instructions.
In a medium skillet, prepare 4 fried eggs over low-to-medium heat. Coat pan with cooking spray and cook until egg whites are firm and no longer clear.
Cut avocado into slices.
Finely chop parsley.
Separate cooked quinoa into two bowls. Top with 2 fried eggs per bowl, 1/2 avocado, parsley, Everything Bagel Seasoning and salsa. Enjoy!
