Happy Monday! I hope everyone enjoyed their long weekend. We spent Saturday up in Santa Barbara at the beach, shopping and eating at our favorite restaurant. Yesterday we just ran errands and had a potluck with our neighbors. It was a nice and relaxing fun filled weekend. Today it’s time to start getting ready for the week and prepping our meals. We’ve started buying ground turkey from Costco because it is so much cheaper there. That leaves me to come up with some creative ways to prepare it. I came up with these quick and easy ground turkey burrito bowls and they’re perfect for meal prepping or just for an easy weeknight dinner.

I’ll be the first to admit, I’m not the biggest fan of ground turkey. However, it is a lean protein source that is pretty good for you. We were short on time and ideas one night so I decided to give these burrito bowls a try. They are super easy to make and will be on the table in 30 minutes or less. It also makes great left overs if you’d prefer to use this recipe for meal prepping.
Ground Turkey Burrito Bowls
These quick and easy ground turkey burrito bowls will be on your table in 30 minutes or less. They're nutritious and the whole family will enjoy!
- 1 can no salt added corn
- 1 can reduced sodium black beans
- 1 pound lean ground turkey
- 1 whole avocado
- 1 cup pico de gallo
- 2 cups brown rice boil in bag works best
- 1 tsp contija cheese optional
- 1/2 tsp paprika
- 1/2 tsp garlic salt
- 1/4 tsp cayenne pepper optional
Prepare brown rice according to package instructions.
While rice is cooking, cook ground turkey thoroughly over medium high heat.
When meat is fully cooked, drain excess liquid and add corn and black beans.
After rice is fully cooked, add to meat, beans and corn and mix thoroughly.
Transfer into 5 equal portions (bowls or meal prep containers) and top with pico de gallo and contija cheese (optional)
The macros for this meal are very good as well if you’re following a flexible dieting plan.
