We all know that breakfast is the most important meal of the day. You are literally breaking your fast from the previous day so it is essential to waking up your metabolism for the day. I haven’t been thebest about sharing recipes here so I’m definitely going to try and be better about that. I only share recipes that I have created on my own or have modified from another recipe so having “new” things to share isn’t always easy. This quinoa breakfast bowl is easy to make and can be made in large batches. (It’s also gluten free)
If you don’t have quinoa or you just don’t like it, you can substitute for oatmeal. Most of the ingredients are things you will already have on hand as well which is always an added bonus!
Hearty Quinoa Breakfast Bowls
- 1 cup dry quinoa
- 1/2 cup blueberries
- 1/2 cup raspberries
- 3/4 cup sliced strawberries
- 2 teaspoons brown sugar
- 2 tablespoons half & half (may substitute for coffee creamer)
- 2 tablespoons unsweetened shredded coconut
- 1 tablespoon chopped pecans (optional)
Prepare quinoa according to package directions
Add in half and half and brown sugar
Top with berries, shredded coconut and pecans (optional)
Serve and enjoy!

I like to eat the bulk of my carbs in the morning since I like to work out right after dropping the girls off at school. This meal is great for me and it’s super easy to make. Sometimes I’ll prepare the quinoa on a Sunday night and heat and serve throughout the week. It’s perfect to add into your weekly meal prep rotation.
