It’s been quite a while since I’ve shared a recipe here but this is something we’ve been making quite frequently lately that’s quick, easy and healthy. As with my outfits, I also love to keep my meals pretty simple in the summer. We’ve often busy with friends, at the pool or it’s just too darn hot to cook. This healthy sesame teriyaki chicken stir fry recipe is super easy and will be ready in under 30 minutes. It’s quickly become a favorite in our house and I’m all for it.
It’s packed with veggies and protein from the boneless skinless chicken breast. The only “unhealthy” ingredient is the teriyaki sauce which isn’t even that bad. I always make sure to read my labels and seek out better options whenever possible. I’ve used a few different teriyaki sauces for this recipe, depending on where I shop that week, and found that the Trader Joes Island teriyaki and the Mandarin Panda Express brands are my favorite.

Healthy Sesame Chicken Teriyaki Stir Fry
- 1 whole red bell pepper
- 1 whole yellow bell pepper
- 2 cups raw broccoli florets
- 2 cups cut green beans
- 2 boneless skinless chicken breasts
- 2 cups jasmine rice
- 2 tbsp sesame seeds
- 3/4 cup teriyaki sauce suggested Trader Joes Island Teriyaki Sauce or Panda Express Mandarin Teriyaki
Cut bell peppers into bit sized pieces.
In large skillet, cook chicken breasts thoroughly.
In second skillet, cook cut bell peppers, broccoli and green peppers over medium high heat. Cover for 5 minutes and continue to cook until desired, softened texture is achieved.
Cut chicken breast into bite sized pieces and add to vegetable mixture. Cook for 1-3 minutes.
Remove chicken and vegetables from heat and drain excess liquid.
Add chicken and vegetables to large bowl and mix in teriyaki sauce.
Cook rice according to package directions. (Note, I LOVE the microwaveable rice from Trader Joes)
Separate cooked rice into 4 servings. Evenly distribute chicken and vegetable mixture into four servings and place on top of bed of rice.
Top with sesame seeds and additional teriyaki sauce as desired. Enjoy!

The rice is absolutely optional here so if you’re looking to cut your carbs even more, you can omit that part and still not miss any flavor.
