We almost always do our grocery shopping on Sundays. However, this weekend we were out of town and have been running on fumes ever since. Last night we drug the whole family to Target at 5 pm to find something to make for dinner. It could have gone terribly wrong, however, the Target gods were in our favor and we left spending only $22.51 and created a new favorite recipe. These bacon and blue burger bowls are ready in under 30 minutes and are relatively healthy too.
We absolutely love burgers around here. Maybe even a little too much. I saw an idea on Pinterest and decided to put my own spin on it. We are becoming foodies to a degree and have acquired a taste for unique and pungent flavor combinations. These burger bowls are so full of flavor that you won’t even miss the bun.
Bacon and Blue Burger Bowls
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp garlic salt
- 1 half red onion
- 2 avocados
- 1 package heirloom cherry tomatoes
- 1 lb 85/15 lean ground beef
- 6 strips thick cut bacon
- 1 package spring mix salad
- 6 whole eggs
- 1/4 cup blue cheese crumbles
- 12 sandwich slice pickles
Prepare bacon in skillet over medium heat.
Remove Cooked bacon from heat and blot excess moisture onto paper towel. Once cooled, break into bite sized pieces.
Cook ground beef in skillet with garlic salt, garlic powder, onion powder and pepper until brown. Remove from heat.
Slice red onion into bite sized pieces, quarter heirloom cherry tomatoes, and slice avocados.
Fry eggs over low to medium heat. For best results, prepare no more than 2 at a time.
Add spring mix to bowl. Layer in produce, pickles, bacon, ground beef and blue cheese.
Top with fried egg and serve.

This recipe is high protein, low carb and high flavor. It was so easy and absolutely delicious! I’m definitely going to add it to my bag of tricks.
