I came up with this recipe a few months ago when I was bored with all of my other chicken recipes. (What else is new, right?) I wanted something that was easy to make, quick to cook, relatively low-carb and that my kids would eat with no objections. Brooklynn has had an aversion to tomatoes and all red foods (minus strawberries and watermelon) for about 3 years now so dinner time is always a battle. She also doesn’t really like cheese but she will eat pizza, quesadillas and cheeseburgers on occasion.
There is a company out there that serves personal pizzas which I really like that are made with a chicken based crust but they are a little pricey and hard to find. I had to find a way to recreate this at home and adapt it into my own recipe. Thus, a lightbulb went off in my head to try to make pizza chicken. It was an instant success. The kids both gobbled it up and were very sad that there weren’t any leftovers.
The recipe is super simple and requires only 4 ingredients. I like to serve with a side of roasted broccoli for a quick and easy week-night 1 pan meal.
30 Minute Low-Carb Pizza Chicken
2 boneless skinless chicken breasts
1/2 cup marinara sauce
1 1/2 cups shredded Italian blend or mozzarella cheese
1/3 cup pepperoni (uncured, no nitrates)
Italian seasoning and garlic salt to taste.
Pre-heat oven to 375*
Use meat tenderizer or rolling pin to flatten chicken to even thinness.
Butterfly each chicken breast and season with Italian seasoning and garlic salt (lightly).
Sear on each side in a frying pan for approximately 30-45 seconds.
Remove chicken from heat and place into baking dish.
Top with marinara sauce, cheese and pepperoni.
*Optional add 2 cups raw broccoli florets to pan and lightly season with pepper, garlic salt and a pinch of cheese.
Bake for 12-15 minutes or until cheese is melted and bubbly.
