We’ve been enjoying fall break this week and it’s been nice not having to be anywhere at a certain time. With both my kids at different schools starting at different times and trying to work from home, life can get a little hectic. Don’t get me wrong, I wouldn’t go back to my corporate 9-5 (err 5-2) for anything. Being at home all of the time still requires a great amount of balancing and discipline. That’s why I love recipes that are quick, clean and that my kids will love. In an effort to cut down on some of the carbohydrates in traditional fajitas, my easy clean eating chicken fajita bowls were born.
Before I lead you to believe that I’m on some sort of carb restrictive diet, I’m not. However, most tortillas are made with processed and refined carbs that should be avoided when possible. This recipe requires minimal effort and it’s one that my whole family eats without tears. These clean eating chick fajita bowls have a great balance of proteins, fats and carbs as well to keep you full and fueled.
Let’s dive in, shall we?
Clean Eating Chicken Fajita Bowls
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/4 teaspoon Garlic Salt
- 1/4 teaspoon Paprika
- 2 boneless skinless chicken breasts
- 1 package boil in bag brown rice
- Tri-color bell peppers (one each)
- Medium zucchini
- Medium avocado
- Onion (optional)
1.Prepare rice according to package directions
2.Cut raw chicken breasts into thin strips.
3.Chop bell peppers and zucchini into matchsticks. Chop onion into thin slices (optional).
4.Add olive oil, seasonings and lime juice into medium frying pan and cook chicken thoroughly.
6.Add rice to bottom of bowl. Top with chicken and vegetable mixture. Garnish with 1/4 sliced avocado.
The nutrition facts (as calculated on MyFitnessPal) are as follows:
Total Calories: 336 Fat: 16 grams Carbohydrates: 31 grams Protein: 19 grams
Because of the equal balance of macros (proteins, fats and carbs) this meal will keep you full on such low calories. It is also great for meal prepping. If you were going to do that I’d add the avocado slices fresh daily so that they don’t turn brown on you (yuck!).
